Rolls of Italian Braciole: Flavorful Beef Stuffed with Herbs and Cheese


8 thin slices of beef (about 2 pounds)
1/2 cup grated Parmesan cheese
1/4 cup breadcrumbs
2 cloves garlic, minced
1/4 cup fresh parsley, chopped
1/4 cup fresh basil, chopped
Salt and pepper to taste
2 tablespoons olive oil
1/2 cup red wine
2 cups tomato sauce


Lay out the beef slices on a flat surface.
In a bowl, mix together Parmesan cheese, breadcrumbs, garlic, parsley, basil, salt, and pepper.
Spread the mixture evenly over each slice of beef.
Roll up the slices tightly and secure with toothpicks.
Heat olive oil in a large skillet over medium heat. Add the rolls and brown on all sides.
Pour in the red wine and allow to reduce slightly, about 2 minutes.
Add the tomato sauce and cover. Simmer for 1-1.5 hours until the beef is tender.
Remove toothpicks before serving.
