Treat yourself to the delightful flavors of Shrimp Scampi Linguine! Succulent shrimp are sautéed in a garlic-infused buttery sauce, then tossed with al dente linguine pasta for a dish that’s light, fresh, and bursting with flavor.
Ingredients:
8 ounces (225g) linguine pasta
1 pound (450g) large shrimp, peeled and deveined
Salt and black pepper to taste
3 tablespoons unsalted butter
3 cloves garlic, minced
1/4 teaspoon red pepper flakes (optional)
1/4 cup (60ml) dry white wine (such as Sauvignon Blanc or Pinot Grigio)
1/4 cup (60ml) chicken or vegetable broth
2 tablespoons freshly squeezed lemon juice
Zest of 1 lemon
2 tablespoons chopped fresh parsley
Grated Parmesan cheese, for serving (optional)
Directions:
Cook the linguine pasta according to package instructions until al dente. Drain and set aside.
Pat the shrimp dry with paper towels and season with salt and black pepper to taste.
In a large skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and red pepper flakes (if using), and cook for 1-2 minutes until fragrant.
Add the seasoned shrimp to the skillet and cook for 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.
Deglaze the skillet with white wine, scraping up any browned bits from the bottom of the pan.
Stir in the chicken or vegetable broth, lemon juice, and lemon zest. Let the sauce simmer for 2-3 minutes to reduce slightly.
Return the cooked shrimp to the skillet and add the cooked linguine pasta. Toss everything together until the pasta is evenly coated with the sauce.
Stir in the remaining tablespoon of butter and chopped fresh parsley.
Serve the Shrimp Scampi Linguine hot, garnished with grated Parmesan cheese if desired.
