2 tablespoons Dijon mustard
-
2 cloves garlic, minced

1 tablespoon cornstarch + 2 tablespoons water (optional, for thickening)
For Garnish:

Orange slices

Fresh rosemary or thyme sprigs
🧑🍳 Instructions
1. Preheat Oven:
-
Preheat to 400°F (200°C). Line a baking sheet or roasting pan with foil for easy cleanup.
2. Prepare the Chicken:
-
Pat chicken dry with paper towels.
-
Rub with olive oil, salt, and pepper on all sides.
-
Arrange in a single layer in the pan, skin side up.
3. Make the Orange Glaze:
-
In a small saucepan, whisk together orange juice, zest, honey, soy sauce, Dijon mustard, garlic, ginger, and red pepper flakes.
-
Bring to a simmer over medium heat and cook for 5–7 minutes, stirring occasionally, until slightly reduced.
-
(If you prefer a thicker glaze, whisk in the cornstarch slurry and cook another 1–2 minutes until glossy.)
4. Roast the Chicken:
-
Brush half of the glaze generously over the chicken.
-
Roast for 35–40 minutes, basting every 10–15 minutes with remaining glaze, until the skin is caramelized and chicken reaches an internal temperature of 165°F (74°C).
5. Finish and Serve:
-
Let rest for 5 minutes.
-
Garnish with fresh orange slices and rosemary or thyme.
-
Spoon pan juices over top before serving.
🍽️ Serving Suggestions:
-
Serve with garlic mashed potatoes, roasted veggies, or steamed jasmine rice.
-
A side of roasted carrots or green beans pairs beautifully with the citrus glaze.
✅ Tips:
-
You can use boneless, skinless chicken thighs — just reduce baking time to 25–30 minutes.
-
Add a splash of balsamic vinegar or orange marmalade to the glaze for extra depth.
-
Leftovers are delicious shredded into salads or wraps!
