Old Fashioned Beef Stroganoff Recipe

Ingredients

For the Stroganoff:

  • 1 ½ lbs (700 g) beef sirloin or tenderloin, thinly sliced into strips

  • Salt and freshly ground black pepper, to taste

  • 2 tablespoons all-purpose flour

  • 2 tablespoons butter

  • 1 tablespoon olive oil

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 8 oz (225 g) mushrooms, sliced (white or cremini)

  • 1 cup beef broth

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon Dijon mustard

  • ½ cup sour cream

  • ¼ cup heavy cream (optional, for extra richness)

  • 1 tablespoon fresh parsley, chopped (for garnish)

For Serving:

  • 8 oz (225 g) egg noodles, cooked according to package directions

  • Extra sour cream or parsley for topping (optional)

1. Prepare the Beef:

  • Pat beef dry and season lightly with salt and pepper.

  • Toss beef strips with flour to coat evenly (this helps thicken the sauce later).

2. Sear the Beef:

  • Heat butter and olive oil in a large skillet over medium-high heat.

  • Add beef in batches (don’t overcrowd) and brown on both sides — about 1–2 minutes per side.

  • Transfer browned beef to a plate and set aside.

3. Sauté the Vegetables:

  • In the same skillet, add onions and cook until soft, about 3–4 minutes.

  • Add mushrooms and cook until browned and tender, about 5 minutes.

  • Stir in garlic and cook another 30 seconds.

4. Make the Sauce:

  • Add beef broth, Worcestershire sauce, and Dijon mustard.

  • Scrape up browned bits from the bottom of the pan for flavor.

  • Simmer for 5–7 minutes until sauce reduces slightly.

5. Add Beef & Cream:

  • Return beef (and any juices) to the skillet.

  • Stir in sour cream and heavy cream (if using).

  • Simmer gently for 3–5 minutes — do not boil — until sauce is creamy and beef is tender.

  • Taste and adjust seasoning with salt and pepper.

6. Serve:

  • Spoon over cooked egg noodles.

  • Garnish with fresh parsley and a dollop of sour cream if desired.

  • For tender meat, slice beef against the grain into thin strips.

  • Avoid overcooking after adding sour cream — it can curdle.

  • Substitute beef with ground beef for a budget-friendly version.
