Ingredients (Makes 4 burritos):

1 lb ground beef

1 packet taco seasoning (or 2 tbsp homemade)

¾ cup water

2 cups cooked rice (white or Mexican rice)

1 cup shredded cheddar or Mexican cheese blend

½ cup nacho cheese sauce (store-bought or homemade)
-
½ cup sour cream
-
½ cup chopped tortilla strips or crushed chips (for crunch – optional)

4 large flour tortillas (burrito-size)
-
Butter or oil, for grilling

½ cup extra shredded cheese, for the grilled cheese crust
👨🍳 Instructions:
1. Cook the beef:

In a skillet, brown ground beef over medium heat.

Drain excess fat.

Stir in taco seasoning and water; simmer until thickened, about 5 minutes.
2. Assemble the burritos:

Warm tortillas for a few seconds to make them pliable.

On each tortilla, layer:
-
A scoop of rice
-
Seasoned beef
-
Drizzle of nacho cheese
-
Dollop of sour cream
-
Handful of shredded cheese
-
Sprinkle of chips (if using)

Fold in the sides, then roll up tightly like a burrito.
3. Grill with cheese:

In a skillet over medium heat, sprinkle 2 tbsp shredded cheese in a circle slightly larger than your burrito.

Place the burrito seam-side down on top of the cheese.

Grill 2–3 minutes until the cheese is golden and crispy.

Flip and toast the other side for 1–2 minutes (optional).
4. Serve:

Let cool slightly, then slice in half and enjoy with extra sour cream, salsa, or hot sauce.
