Easy Grilled Cheese Burrito

Ingredients (Makes 4 burritos):

  • 1 lb ground beef

  • 1 packet taco seasoning (or 2 tbsp homemade)

  • ¾ cup water

  • 2 cups cooked rice (white or Mexican rice)

  • 1 cup shredded cheddar or Mexican cheese blend

  • ½ cup nacho cheese sauce (store-bought or homemade)

  • ½ cup sour cream

  • ½ cup chopped tortilla strips or crushed chips (for crunch – optional)

  • 4 large flour tortillas (burrito-size)

  • Butter or oil, for grilling

  • ½ cup extra shredded cheese, for the grilled cheese crust


👨‍🍳 Instructions:

1. Cook the beef:

  • In a skillet, brown ground beef over medium heat.

  • Drain excess fat.

  • Stir in taco seasoning and water; simmer until thickened, about 5 minutes.

2. Assemble the burritos:

  • Warm tortillas for a few seconds to make them pliable.

  • On each tortilla, layer:

    • A scoop of rice

    • Seasoned beef

    • Drizzle of nacho cheese

    • Dollop of sour cream

    • Handful of shredded cheese

    • Sprinkle of chips (if using)

  • Fold in the sides, then roll up tightly like a burrito.

3. Grill with cheese:

  • In a skillet over medium heat, sprinkle 2 tbsp shredded cheese in a circle slightly larger than your burrito.

  • Place the burrito seam-side down on top of the cheese.

  • Grill 2–3 minutes until the cheese is golden and crispy.

  • Flip and toast the other side for 1–2 minutes (optional).

4. Serve:

  • Let cool slightly, then slice in half and enjoy with extra sour cream, salsa, or hot sauce.


🔁 Variations:

  • Add beans (refried or black) or sautéed peppers and onions.

  • Use shredded chicken or ground turkey instead of beef.

  • Make it vegetarian with soy crumbles or extra rice, beans, and cheese.
