  • 1 clove garlic, minced or grated

  • 1 tsp sesame seeds

  • 1โ€“2 green onions, thinly sliced

  1. Prep the cucumbers:

    • Thinly slice cucumbers (use a mandoline for ultra-thin slices if you like).

    • Place in a colander, sprinkle with salt, and toss. Let sit for 10โ€“15 minutes to draw out excess water.

    • Pat dry with paper towels to keep the salad from getting watery.

  2. Make the dressing:
    In a small bowl, whisk together:

    • Rice vinegar

    • Soy sauce

    • Sesame oil

    • Sugar

    • Garlic

    • Red pepper flakes (if using)

  3. Toss the salad:

    • In a bowl, combine drained cucumbers, green onions, sesame seeds, and dressing.

    • Toss well to coat.
