Ingredients (Makes 8–10 sliders):
For the steak:
-
1½ lbs flank steak, sirloin, or ribeye, thinly sliced against the grain
-
1 tbsp olive oil
-
1 tbsp Worcestershire sauce
-
1 tsp garlic powder
-
Salt & pepper, to taste
For the cowboy butter:
-
½ cup (1 stick) unsalted butter, melted
-
2 cloves garlic, minced
-
1 tbsp Dijon mustard
-
1 tbsp lemon juice
-
1 tsp paprika
-
1 tsp red pepper flakes (adjust to taste)
-
1 tbsp chopped fresh parsley
-
½ tsp salt
-
½ tsp black pepper
For assembly:
-
8–10 slider buns (or Hawaiian rolls)
-
6–8 slices provolone, Swiss, or cheddar
-
Optional: caramelized onions, arugula, pickles, or crispy onions
👨🍳 Instructions:
1. Marinate the steak (optional):
Toss steak slices with olive oil, Worcestershire, garlic powder, salt, and pepper. Let sit for 15–30 minutes while prepping everything else.
2. Make the cowboy butter:
In a bowl, whisk together melted butter, garlic, mustard, lemon juice, paprika, red pepper flakes, parsley, salt, and pepper. Set aside.
3. Cook the steak:
Heat a skillet or grill pan over medium-high heat. Sear steak slices for 1–2 minutes per side until nicely browned and cooked to your liking. Don’t overcrowd the pan — work in batches if needed.
4. Build the sliders:
-
Split your buns and layer the bottom halves in a greased baking dish or on a tray.
-
Add steak slices, a spoonful of cowboy butter, and a slice of cheese (cut to fit).
-
Add any optional toppings (caramelized onions = 🔥).
-
Place the bun tops on.
5. Warm and toast (optional but recommended):
Brush tops with extra cowboy butter and bake at 350°F (175°C) for 10–12 minutes, until cheese is melty and buns are lightly toasted.
