Classic Brazilian Brigadeiros

Ingredients

  • 2 cans (14 oz each / 395 g) sweetened condensed milk
  • 4 tablespoons unsweetened cocoa powder (sifted to avoid lumps)
  • 4 tablespoons unsalted butter (divided: 2 tbsp for cooking, 2 tbsp for rolling/greasing hands)
  • 150 g (5 oz) good-quality milk chocolate or semi-sweet chocolate (for filling, optional but recommended for lava effect)
  • Pinch of salt
  • Chocolate sprinkles (for coating)

Instructions

  1. In a heavy-bottomed saucepan over medium-low heat, combine the condensed milk, cocoa powder, 2 tablespoons butter, and salt.
  2. Stir continuously with a silicone spatula or wooden spoon.
  3. Cook for 10–12 minutes until the mixture thickens and pulls away from the bottom of the pan when stirred (soft fudge consistency).
  4. Transfer the mixture to a buttered plate or bowl.
  5. Let cool completely to room temperature. (You can refrigerate for 20–30 minutes to speed it up.)
  6. Lightly grease your hands with butter.
  7. Take a small spoonful of cooled mixture, flatten it in your palm, and place a small piece of chocolate in the center.
  8. Roll into a smooth ball, encasing the chocolate.
  9. Roll each ball in chocolate sprinkles to coat.
  10. Place each brigadeiro into a mini paper liner.

Notes

  • Ensure to sift the cocoa powder to avoid lumps in the mixture.
  • For a richer flavor, use high-quality chocolate for the filling.
  • These treats can be stored in an airtight container for several days.
