Ingredients:
– 1 can (15 oz) chickpeas, drained and rinsed
– 1 medium cucumber, diced
– 1 medium tomato, diced
– 1/4 red onion, finely chopped
– 1/4 cup chopped fresh parsley
– 1/4 cup olive oil
– 2 tablespoons lemon juice
– Salt and pepper, to taste
– Optional: Feta cheese or avocado for added flavor
Instructions:
1. Prepare the Ingredients: Drain and rinse the chickpeas under cold water. Dice the cucumber and tomato, and finely chop the red onion and parsley.
2. Combine the Ingredients: In a large bowl, add the chickpeas, cucumber, tomato, red onion, and parsley.
3. Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Adjust the seasoning to your taste.
4. Mix the Salad: Pour the dressing over the chickpea mixture and toss everything together until well combined.
5. Serve: You can serve the salad immediately or let it sit in the refrigerator for about 30 minutes to allow the flavors to meld. If you like, add feta cheese or avocado just before serving for extra flavor.
