Ingredients

For the Chicken Pillows:

  • 2 cups cooked chicken, shredded (rotisserie works great)

  • 4 oz (½ block) cream cheese, softened

  • 2 tablespoons melted butter

  • 1 tablespoon finely chopped green onion (optional)

  • Salt and pepper, to taste

  • 1 (8-count) can refrigerated crescent roll dough

  • ¼ cup melted butter (for brushing)

  • ½ cup Italian-style breadcrumbs (for coating)

For the Creamy Parmesan Sauce:

  • 2 tablespoons butter

  • 2 tablespoons all-purpose flour

  • 1 ½ cups milk (whole or 2%)

  • ½ cup heavy cream (optional for extra richness)

  • ½ cup grated Parmesan cheese

  • 1 teaspoon garlic powder

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 1 teaspoon chicken bouillon or base (optional for flavor boost)


🧑‍🍳 Instructions

1. Preheat Oven:

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or grease it lightly.

2. Make the Chicken Filling:

  • In a mixing bowl, combine shredded chicken, softened cream cheese, melted butter, green onions (if using), salt, and pepper.

  • Mix until creamy and well combined.

3. Assemble the Chicken Pillows:

  • Unroll crescent dough and separate into 8 triangles.

  • Place about 2 tablespoons of the chicken mixture in the center of each triangle.

  • Fold the corners over the filling and pinch edges to seal completely, forming a “pillow” or packet shape.

  • Brush each pillow with melted butter, then roll or sprinkle with breadcrumbs for a crispy coating.

  • Arrange on prepared baking sheet.

4. Bake:

  • Bake for 15–20 minutes, or until golden brown and puffed.

5. Make the Creamy Parmesan Sauce:

  • In a medium saucepan, melt 2 tablespoons butter over medium heat.

  • Whisk in flour and cook for 1 minute to form a roux.

  • Slowly whisk in milk (and cream, if using) until smooth.

  • Stir in Parmesan, garlic powder, salt, pepper, and chicken bouillon.

  • Simmer 3–4 minutes, stirring until thickened and creamy.

6. Serve:

  • Pour warm Parmesan sauce over the baked chicken pillows.

  • Garnish with parsley or extra Parmesan if desired.
