Chicken Buttered Noodles

Ingredients:

  • 8 oz egg noodles or your favorite pasta

  • 2 cups cooked chicken, shredded or diced (rotisserie chicken works great!)

  • 4 tbsp unsalted butter

  • 2 cloves garlic, minced

  • ½ cup chicken broth or pasta cooking water

  • ¼ cup grated Parmesan cheese (optional)

  • Salt and pepper, to taste

  • Fresh parsley or chives, chopped (for garnish)


👨‍🍳 Instructions:

1. Cook the noodles:

  • Cook pasta according to package directions until al dente. Drain, reserving ½ cup pasta water if you like.

2. Sauté garlic:

  • In a large skillet over medium heat, melt butter.

  • Add minced garlic and sauté until fragrant (about 1 minute), careful not to burn.

3. Add chicken and broth:

  • Stir in shredded chicken and chicken broth or reserved pasta water.

  • Cook for 2–3 minutes to warm through and blend flavors.

4. Combine with noodles:

  • Add drained noodles to the skillet. Toss well to coat with butter and chicken.

  • Stir in Parmesan if using.

  • Season with salt and pepper to taste.

5. Serve:

  • Garnish with fresh parsley or chives and serve warm.


🔁 Variations:

  • Add steamed broccoli or peas for some greens.

  • Swap butter for olive oil and add red pepper flakes for a little kick.

  • Use cream or half-and-half for a richer sauce.
