Cheddar and Herb Soda Bread

Ingredients:
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon sugar
1 1/2 cups buttermilk
1 large egg
1/4 cup unsalted butter, melted
1 1/2 cups sharp cheddar cheese, shredded
2 tablespoons fresh parsley, chopped
1 tablespoon fresh chives, chopped
1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
Directions:
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together flour, baking soda, baking powder, salt, and sugar.
In a separate bowl, whisk together buttermilk, egg, and melted butter.
Stir wet ingredients into the dry mixture until just combined (dough will be sticky).
Gently fold in cheddar cheese and herbs.
Turn dough onto a floured surface and shape into a round loaf. Place on prepared baking sheet.
Using a sharp knife, cut an “X” across the top of the loaf.
Bake for 35–40 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
Let cool slightly before slicing and serving warm.
