Ingredients:
For the dough:

1 cup (2 sticks) unsalted butter, softened

1. Make the dough:

In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.

Beat in eggs one at a time, then add vanilla.

In another bowl, whisk together flour, baking powder, salt, and cinnamon.

Gradually mix dry ingredients into the wet until just combined.

Divide dough in half, flatten into disks, wrap in plastic, and chill for at least 1 hour.
2. Prepare the filling:

Mix brown sugar, cinnamon, and melted butter in a small bowl until crumbly.
3. Assemble the cookies:

Preheat oven to 350°F (175°C). Line baking sheets with parchment.

Roll out one dough disk on a lightly floured surface to about ¼-inch thickness.

Cut into rectangles (about 3×2 inches).

Spoon a small amount of filling onto half the rectangles, leaving edges clear.

Roll out second dough disk and place rectangles on top, pressing edges gently to seal. Use a fork to crimp edges.

Use a toothpick to poke a few holes on top to vent steam.
4. Bake:

Bake for 12–15 minutes or until edges are golden brown. Cool on wire racks.
5. Glaze (optional):

Whisk powdered sugar, milk, and vanilla until smooth. Drizzle over cooled cookies and let set.
