Ingredients :
– 1 pound Italian sausage, casings removed
– 1 tablespoon olive oil
– 1 medium onion, chopped
– 2 cloves garlic, minced
– 1 cup uncooked long-grain white rice
– 2 cups vegetable broth
– 1 (15-ounce) can black beans, rinsed and drained
– 1 teaspoon chili powder
– 1/2 teaspoon cumin
– Salt and pepper to taste
– Optional: chopped cilantro for garnish
Directions :
1. Heat the olive oil in a large skillet over medium heat. Add the sausage and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
2. Add the onion to the skillet and cook until softened, about 5 minutes. Stir in the garlic and cook for 1 minute more.
3. Add the rice to the skillet and stir to coat with the sausage and onion mixture. Cook for 1 minute, stirring constantly.
4. Stir in the vegetable broth, black beans, chili powder, and cumin. Season with salt and pepper to taste.
5. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked through and the liquid is absorbed. Fluff with a fork before serving.
