Ingredients

For the Chicken:

  • 4 bone-in, skin-on chicken thighs (or 1 whole chicken, cut into pieces)

  • 2 tablespoons olive oil

  • Salt and freshly ground black pepper, to taste

For the Orange Glaze:

  • ¾ cup fresh orange juice (about 2 oranges)

  • 2 tablespoons orange zest

  • 3 tablespoons honey (or maple syrup)

  • 2 tablespoons soy sauce

  • 2 tablespoons Dijon mustard

  • 2 cloves garlic, minced

  • 1 teaspoon grated fresh ginger (optional, for brightness)

  • ½ teaspoon crushed red pepper flakes (optional, for mild heat)

  • 1 tablespoon cornstarch + 2 tablespoons water (optional, for thickening)

For Garnish:

  • Orange slices

  • Fresh rosemary or thyme sprigs


🧑‍🍳 Instructions

1. Preheat Oven:

  • Preheat to 400°F (200°C). Line a baking sheet or roasting pan with foil for easy cleanup.

2. Prepare the Chicken:

  • Pat chicken dry with paper towels.

  • Rub with olive oil, salt, and pepper on all sides.

  • Arrange in a single layer in the pan, skin side up.

3. Make the Orange Glaze:

  • In a small saucepan, whisk together orange juice, zest, honey, soy sauce, Dijon mustard, garlic, ginger, and red pepper flakes.

  • Bring to a simmer over medium heat and cook for 5–7 minutes, stirring occasionally, until slightly reduced.

  • (If you prefer a thicker glaze, whisk in the cornstarch slurry and cook another 1–2 minutes until glossy.)

4. Roast the Chicken:

  • Brush half of the glaze generously over the chicken.

  • Roast for 35–40 minutes, basting every 10–15 minutes with remaining glaze, until the skin is caramelized and chicken reaches an internal temperature of 165°F (74°C).

5. Finish and Serve:

  • Let rest for 5 minutes.

  • Garnish with fresh orange slices and rosemary or thyme.

  • Spoon pan juices over top before serving.
