1. Prepare the Beef:

Pat beef dry and season lightly with salt and pepper.

Toss beef strips with flour to coat evenly (this helps thicken the sauce later).
2. Sear the Beef:

Heat butter and olive oil in a large skillet over medium-high heat.

Add beef in batches (don’t overcrowd) and brown on both sides — about 1–2 minutes per side.

Transfer browned beef to a plate and set aside.
3. Sauté the Vegetables:

In the same skillet, add onions and cook until soft, about 3–4 minutes.

Add mushrooms and cook until browned and tender, about 5 minutes.

Stir in garlic and cook another 30 seconds.
4. Make the Sauce:

Add beef broth, Worcestershire sauce, and Dijon mustard.

5. Add Beef & Cream:

Return beef (and any juices) to the skillet.

Stir in sour cream and heavy cream (if using).

Simmer gently for 3–5 minutes — do not boil — until sauce is creamy and beef is tender.

6. Serve:
