Mashed Potato Cheese Puffs

Ingredients:

  • 2 cups mashed potatoes (leftovers work great!)

  • 1 cup shredded cheddar cheese (or your favorite cheese)

  • 1/4 cup grated Parmesan cheese

  • 1/4 cup all-purpose flour

  • 2 large eggs

  • 2 green onions, finely chopped (optional)

  • 1 teaspoon garlic powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • Oil for frying (vegetable or canola)

  1. Mix Ingredients:
    In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan, flour, eggs, green onions, garlic powder, salt, and pepper. Mix until well combined.

  2. Form Puffs:
    Using your hands or a spoon, shape the mixture into small balls or bite-sized puffs.

  3. Heat Oil:
    Heat about 2 inches of oil in a deep skillet or pot to 350°F (175°C).

  4. Fry Puffs:
    Fry the puffs in batches for 2–3 minutes, turning occasionally, until golden brown and crispy.

  5. Drain:
    Remove with a slotted spoon and drain on paper towels.

  6. Serve:
    Serve warm with ketchup, ranch, or your favorite dipping sauce.


Tips:

  • For a healthier version, bake the puffs at 400°F (200°C) for about 20 minutes, turning halfway through.

  • Add chopped herbs like parsley or chives for extra flavor.

  • You can swap cheddar for mozzarella or pepper jack for a spicy kick.
