1. Make the dough:

In a saucepan, combine water, coconut oil, salt, and maple syrup. Bring to a boil.

Remove from heat and quickly stir in flour and cinnamon until a smooth dough forms. It will be thick and sticky.

Let cool slightly, then stir in vanilla.
2. Pipe the bites:

Transfer dough to a piping bag fitted with a large star tip (or use a zip-top bag with the corner snipped).

Pipe small 1–2 inch bite-sized rounds onto parchment paper or a silicone mat.
3. Preheat air fryer:

Preheat your air fryer to 375°F (190°C) for about 3 minutes.
4. Air fry the bites:

Carefully transfer the piped dough rounds to the air fryer basket (use parchment if needed).

Cook for 8–10 minutes, turning halfway, until golden and crisp.
5. Coat the churro bites:

Mix cinnamon and sugar in a bowl.
