Ingredients:

1 lb smoked sausage, sliced into ½-inch rounds (kielbasa or andouille work great)

2 lbs baby potatoes (Yukon gold or red), quartered or halved

1 packet ranch seasoning mix (1 oz)

2 tbsp olive oil

1 ½ cups shredded cheddar cheese

1 cup shredded mozzarella cheese (or use all cheddar)

¼ cup sour cream (optional, for creaminess)

Chopped green onions or parsley, for garnish

Salt & pepper, to taste
👨🍳 Instructions:
1. Preheat oven to 400°F (200°C). Grease a large baking dish or sheet pan.
2. Toss the potatoes:

In a large bowl, mix potatoes with olive oil and ranch seasoning. Toss to coat well.
3. Add sausage:

Stir in sliced smoked sausage. Spread everything evenly in your baking dish or on a lined sheet pan.
4. Roast:

Bake for 35–40 minutes, stirring halfway, until potatoes are fork-tender and starting to brown.
5. Add cheese:

Remove from oven and sprinkle shredded cheeses over the top. Return to oven for 5–7 minutes, or until cheese is melted and bubbly.
6. Garnish & serve:

Optional: Dollop with sour cream and sprinkle with green onions or parsley.
