Ingredients:

  • 2 cups shredded carrots (about 3–4 medium carrots)

  • 2 medium apples, julienned or shredded (Granny Smith, Honeycrisp, or Fuji work well)

  • ¼ cup raisins or dried cranberries

  • 2 tbsp chopped walnuts or sunflower seeds (optional, for crunch)

  • 1 tbsp lemon juice (to prevent apple browning)

  • Optional: 1–2 tbsp chopped parsley for freshness

For a Creamy Dressing:

  • ¼ cup plain Greek yogurt or mayonnaise

  • 1 tbsp honey or maple syrup

  • 1 tbsp apple cider vinegar or lemon juice

  • Salt and pepper, to taste

For a Light Vinaigrette Option:

  • 2 tbsp olive oil

  • 1 tbsp apple cider vinegar

  • 1 tsp honey or Dijon mustard

  • Salt and pepper, to taste


👨‍🍳 Instructions:

  1. Prep apples first by slicing or shredding them, then toss with lemon juice to prevent browning.

  2. In a large bowl, combine:

    • Shredded carrots

    • Apples

    • Raisins or dried cranberries

    • Nuts/seeds, if using

  3. In a small bowl, whisk together your choice of dressing (creamy or vinaigrette).

  4. Pour dressing over the carrot-apple mixture and toss until everything is evenly coated.

  5. Chill for 15–30 minutes before serving for best flavor (optional, but recommended).
