Crab Stuffed Cheddar Bay Biscuit With A Lemon Butter Sauce

Ingredients

For the Biscuits:

  • 2 cups all-purpose flour

  • 1 tbsp baking powder

  • ½ tsp baking soda

  • 1 tsp garlic powder

  • ½ tsp Old Bay seasoning (optional, for extra flavor)

  • ½ tsp salt

  • ½ cup (1 stick) cold butter, cubed

  • 1 cup shredded sharp cheddar cheese

  • ¾ to 1 cup buttermilk

For the Crab Filling:

  • 8 oz lump crab meat, picked over for shells

  • 2 tbsp cream cheese, softened

  • 2 tbsp mayonnaise

  • 1 tbsp lemon juice

  • 1 tsp Dijon mustard

  • 1 tsp Old Bay seasoning

  • 1 tbsp chopped parsley

  • Optional: 1 tbsp finely chopped green onion or chives

For the Lemon Butter Sauce:

  • ¼ cup unsalted butter

  • 1 tbsp lemon juice

  • ½ tsp lemon zest

  • 1 small garlic clove, minced

  • Pinch of salt and pepper

  • Optional: pinch of paprika or cayenne for heat


👨‍🍳 Instructions

1. Make the Crab Filling:

  1. In a small bowl, mix together cream cheese, mayo, lemon juice, Dijon mustard, Old Bay, parsley, and green onion (if using).

  2. Gently fold in the crab meat, trying to keep lumps intact. Set aside.

2. Make the Biscuit Dough:

  1. Preheat oven to 425°F (220°C).

  2. In a large bowl, whisk together flour, baking powder, baking soda, garlic powder, Old Bay, and salt.

  3. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

  4. Stir in the shredded cheddar.

  5. Add buttermilk gradually and mix until just combined — do not overmix.

3. Assemble the Stuffed Biscuits:

  1. Scoop about 2 tablespoons of dough and flatten into a disk in your hand.

  2. Add 1 tablespoon of crab filling to the center.

  3. Top with another small disk of dough and seal edges by pinching them together.

  4. Shape into a biscuit and place seam-side down on a parchment-lined baking sheet.

  5. Repeat with remaining dough and filling.

4. Bake:

  • Bake at 425°F for 14–16 minutes, or until biscuits are golden brown and baked through.


5. Make the Lemon Butter Sauce:

  1. While the biscuits bake, melt butter in a small saucepan over medium-low heat.

  2. Add garlic and sauté for 30 seconds (don’t brown).

  3. Stir in lemon juice, zest, salt, pepper, and paprika (if using).

  4. Remove from heat.
