2 medium apples, peeled, cored, and diced (Granny Smith or Honeycrisp work well)

Lightly grease an 8×8 or 9×9-inch baking dish (or similar size).

In a large bowl, combine the oats, baking powder, cinnamon, nutmeg, and salt.

In another bowl or large measuring cup, whisk together the milk, egg, maple syrup, melted butter, and vanilla.

Pour the wet ingredients into the dry, stir to combine.

Fold in the diced apples and nuts (if using).

Pour the mixture into the prepared baking dish and spread evenly.

(Optional) Top with additional apple chunks, nuts, or a sprinkle of brown sugar for a golden top.
