Oatmeal Apple Breakfast Bake

Ingredients:

  • 2 cups rolled oats (old-fashioned, not quick oats)

  • 1 tsp baking powder

  • 1 ½ tsp ground cinnamon

  • ¼ tsp ground nutmeg (optional)

  • ¼ tsp salt

  • 2 cups milk (dairy or non-dairy like almond or oat)

  • 1 large egg

  • ⅓ cup maple syrup or honey

  • 2 tbsp melted butter or coconut oil

  • 1 ½ tsp vanilla extract

  • 2 medium apples, peeled, cored, and diced (Granny Smith or Honeycrisp work well)

  • ½ cup chopped nuts (optional – walnuts or pecans)

  • Optional topping: more diced apple, chopped nuts, or a sprinkle of brown sugar


👨‍🍳 Instructions:

  1. Preheat oven to 375°F (190°C).

  2. Lightly grease an 8×8 or 9×9-inch baking dish (or similar size).

  3. In a large bowl, combine the oats, baking powder, cinnamon, nutmeg, and salt.

  4. In another bowl or large measuring cup, whisk together the milk, egg, maple syrup, melted butter, and vanilla.

  5. Pour the wet ingredients into the dry, stir to combine.

  6. Fold in the diced apples and nuts (if using).

  7. Pour the mixture into the prepared baking dish and spread evenly.

  8. (Optional) Top with additional apple chunks, nuts, or a sprinkle of brown sugar for a golden top.

  9. Bake for 35–45 minutes, or until the center is set and the top is lightly golden.

  10. Let cool for 5–10 minutes before serving.
