Ingredients (Serves 1–2)

  • 1/2 cup rolled oats (or quick oats)

  • 1 cup milk (dairy or plant-based)

  • 1 egg (or 2 egg yolks for extra richness)

  • 1–2 tsp maple syrup, honey, or brown sugar (adjust to taste)

  • 1/2 tsp vanilla extract

  • Pinch of salt

  • Optional spices: 1/4 tsp cinnamon, nutmeg, or cardamom

  • Optional add-ins: banana slices, berries, raisins, or chopped nuts


📝 Instructions

1. Heat the Milk and Oats

  • In a small saucepan, combine oats, milk, sweetener, salt, and optional spices.

  • Heat over medium heat, stirring occasionally, until the oats begin to soften and thicken (about 3–5 minutes).

2. Temper the Egg

  • In a small bowl, beat the egg.

  • Slowly pour a few spoonfuls of the hot oatmeal mixture into the beaten egg while whisking constantly — this tempers the egg so it doesn’t scramble.

  • Then pour the egg mixture back into the pot, stirring continuously.

3. Cook Until Creamy

  • Continue cooking the oatmeal over low to medium heat, stirring constantly, for 2–3 more minutes.

  • The egg will gently cook, thickening the oats into a creamy, custard-like texture.

4. Finish and Serve

  • Remove from heat.

  • Stir in vanilla extract.

  • Serve warm with your favorite toppings: fresh fruit, nuts, nut butter, seeds, or extra milk.
