Cranberry Orange Glazed Turkey Breast
Ingredients:
2 to 3 pounds turkey breast, boneless and skinless
1 cup fresh or frozen cranberries
1/2 cup orange juice
1/4 cup brown sugar
2 tablespoons honey
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1. Preheat your oven to 350°F (175°C).
2. In a medium saucepan, combine the cranberries, orange juice, brown sugar, honey, cinnamon, salt, and pepper. Cook over medium heat, stirring occasionally, until the cranberries burst and the mixture thickens, about 10-15 minutes. Remove from heat and let cool slightly.
3. In a small bowl, mix together the olive oil, garlic powder, and onion powder. Rub this mixture all over the turkey breast.
4. Place the turkey breast in a roasting pan and pour half of the cranberry orange glaze over the top. Reserve the other half for later.
5. Roast the turkey in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (75°C). Baste the turkey with the glaze every 20 minutes.
6. Once cooked, remove the turkey from the oven and let it rest for 10-15 minutes before slicing.
7. Serve the sliced turkey with the remaining cranberry orange glaze drizzled on top.
